Once the machine started, the rest relied entirely on the master's "eagle eyes" and experience. If the batter looked too thick and couldn't be stirred, a little water had to be added; if it was too thin, flour had to be added. There was no rigid data for this; it was entirely adjusted based on the current condition. |

When controlling the mixer, you can't place it too low, otherwise it will hit the bottom or the edge of the bucket, and you can't just keep it still either; you have to move it up and down a bit. |

When watching the master do it, it looked as smooth as floating clouds and flowing water, but when doing it myself, I found that even "moving it up and down" was very hard to control. This proved the saying "One minute on stage takes ten years of practice off stage," and it also made me admire these elder volunteers who quietly dedicate themselves even more. |

I originally thought it would be easy just holding the machine and letting it spin, but once I actually got my hands on it, I realized that the mixer, which looked like an electric drill, was incredibly heavy! The motor's vibration was so strong that I almost couldn't grip it. This made me realize how much physical strength and endurance the masters need to mix hundreds of kilograms of batter every day. Every bite of delicious Jian Dui is exchanged with the sweat of the volunteers. |
