Black Thinking Hat: The Jian-dui for Mending the Sky During the Dragon Boat Festival is Now Only Found in Lukang  
Black Thinking Hat: Black is the color of logic and negativity. It represents caution and critical thinking. During the thinking process, it involves reflecting on facts, judging whether they match the evidence, and considering negative factors such as risks, difficulties, and potential problems.

Nowadays, those who know how to make traditional Jian-dui are almost entirely gray-haired elderly volunteers. It is a tiring and difficult job. If young people do not step up to learn it, once these elders are too old to do the work, this unique custom—found only in Lukang across all of Taiwan—might disappear forever. Just thinking about it makes me feel that it would be a great pity, and it is quite scary.

     
     

In comparison, insisting on making them "purely by hand and fresh on the spot" takes several hours, and the efficiency is truly low. Fortunately, the most labor-intensive step—stirring a giant bucket of batter—is now assisted by safe and sanitary machines.

     
     

In the past, people might have found it lively and bustling to light an open fire at the temple entrance, sweating profusely while frying the batter. However, people nowadays have high standards for "food safety." If the volunteers don't wear masks or gloves, or if the food is left outside in the wind and gathers dust, many people might be too afraid to eat it due to hygiene concerns.

   
   

We can see that during the "live handmade process," the volunteers all wear masks. Visitors can also clearly observe the preparation process. This approach not only preserves the warmth of human connection but also resolves any hygiene concerns!

     
     
     

This time, our "Sky-Mending Squad" can act as cultural ambassadors. Taking advantage of the Dragon Boat Festival, we can observe the elderly volunteers making Jian-dui. We can use our tablets to document the recipes, ingredient ratios, and flipping techniques on our webpage for the Cyberfair competition! By turning this into local cultural teaching materials for Ludong Elementary School, we can ensure that this precious, "only-in-Taiwan" culture will not be lost to time.
