| I'm a Little Chef—Teaching Class 6-1 to Fry "Jian Dui" |

The three of us are all students in Class 1, Grade 6. As the saying goes, many hands make light work, so our class volunteered to fry "Jian Dui." We three were to teach the entire Class 1, Grade 6 how to make Lukang "Jian Dui." |

On September 17, 2025, we invited the school nutritionist to teach us how to make "Jian Dui". Through group collaboration, we learned how to make "Jian Dui" and tested the feasibility of serving 200 servings of "Jian Dui" to the entire school on Teacher's Day, September 26, 2025. |

The entire sixth-grade class was divided into six groups, each responsible for different equipment (e.g., preparing gas stoves, large pots, frying spatulas, etc.). |

The ratio for making four "Jian Dui" is: 100g flour, 30g granulated sugar, and 130g cold water. Each group prepared enough batter to make 20 "Jian Dui". All ingredients were then added and mixed until the batter was non-granular and of moderate consistency. |

Our "Jian Dui" is sweet. This time, we plan to add Lukang's traditional roasted wheat flour after frying. |

First, pour oil into a frying pan. Once the pan is hot, scoop a spoonful of batter and spread it evenly. |

Once the bottom of the batter turns golden brown, flip it over and cook until done. Flipping it looks a bit difficult. |

We found that "controlling the heat" and "flipping" were the most difficult. The first group flipped the "Jian Dui" too early, causing it to fall apart. However, after adding roasted wheat flour, it still tasted delicious. |

We specifically chose to make "Jian Dui" a week before Teacher's Day to see if we could prepare nearly two hundred servings for all the teachers on Teacher's Day, September 26, 2025. |

I only knew "Jian Dui" was delicious before, but I never imagined it would be so difficult to teach the whole class how to make it! Watching the six groups of students go from frantic activity to finally managing to fry a complete "Jian Dui" was truly rewarding. |

We learned a lot from having a nutritionist guide us in making "Jian Dui" this time. She taught us how to maintain hygiene and efficiency during large-scale production. Thinking about Teacher's Day next week, September 26th, 2025, we'll be aiming to make 200 servings that day. Although the pressure is immense, seeing the teachers' surprised and moved expressions will make it all worthwhile! |

The saying "Many hands make light work" proved true in our Class 6-1. Although some of the "Jian Dui" were burnt during our trial on September 17, 2025, we still had time to correct them. This wasn't just a cooking class; it was more like a "Mends the Sky" project completed by our whole class. We want to use this traditional Lukang delicacy to thank all the teachers in the school! |
