Roll, Jian Dui!  

At first, we just watched from the side. Later, the aunties asked if we wanted to give it a try. Of course, we wanted to do it ourselves, but we were also worried that the people queuing might get impatient. However, the process went very smoothly. With the volunteer aunties gatekeeping the Jian Dui, it was a guarantee of quality.

   
   

Pouring the batter: Control your wrist strength to let the batter form a circle on the hot pan.

   
   
   

Timing to flip: The aunties taught us to watch for the edges getting slightly scorched and the center bubbling, which is the right time to flip it.

     
     
     

Strict gatekeeping: Before each piece of Jian Dui was taken out of the pan, a volunteer auntie confirmed its doneness and color. With them there, it was a "quality guarantee," allowing us to boldly let go and do it.

     
     
     

This was my first time cooking in front of so many people! I originally thought the people queuing would be impatient, but everyone waited very kindly when they saw students learning. This taught me that as long as you have the heart to do something well, the people around you (the volunteer aunties and the public) will offer their tolerance and support.

   
   
   

You can tell that we pan-fried them quite well, right? So we also decided to make Jian Dui with our own hands and give them to the teachers to enjoy on Teacher's Day.

     
     
     

The aunties didn't reject us because they were in a hurry; instead, they were willing to slow down and teach us. This is "passing down the heritage"—not just pan-frying the Jian Dui well, but handing this passion for service over to us, making us want to let more people know about the deliciousness of Jian Dui.

 
 

Looking at the results of our own pan-frying, we got a new inspiration! Since we learned this unique Lukang "sky-patching" craft, we decided that on the upcoming Teacher's Day, we will personally make Jian Dui to give to all the teachers in the school to enjoy.

   
   
     
     
     

Nüwa patched the sky to protect all living beings, and the teachers teaching us are also protecting our future. Using "Jian Dui" to express our gratitude to the teachers is definitely the most meaningful gift with the strongest Lukang flavor!
